Today I have a recipe that takes just a few minutes to prepare and while it is baking in the oven, you can do something you want to do. 😊
We all have days when we think “what’s for dinner that can be quick and easy.
My first thought goes to a recipe that has been in my recipe file for years.
Chicken Casserole.
My kids loved it (when they lived at home) and the Captain is always loving it…
So it has been in my rotation for a long time.
One of the great things about this recipe is you can make it while the chicken is defrosting (if you have forgotten to defrost)
Ask me how I know that!
Yep, that has happened to me many times.
So you can stick it in the microwave on defrost while you put together the other ingredients and then BAM! Dinner is ready.
You can use any part of the chicken you prefer…breasts, thighs, legs, tenders…you name it.
Bone in or out, although boneless makes for easier eating (cutting around the bone, etc)
Skinless preferred, but skin-on works too.
The steps are so easy.
Place raw chicken in a casserole dish, dump cream of anything soup on top of chicken and then…
Put stuffing mix on top of the soup and add broth.
Place in the oven and bake for 30 minutes covered and 15 minutes uncovered. (or until chicken registers 165 degrees)
The soup and chicken broth make for a nice gravy.
Yummy!
Now how simple is that?
While the casserole is baking you can tend to the sides etc.
In this case I used Green Beans.
You could add a salad and crusty bread…
Or the casserole is great as is.
There are many variations of this recipe but was a staple at our table when I was growing up.
The soup I prefer is Cream of Chicken, but Cream of mushroom, Cream of Celery or anything “Cream of” works.
The only thing I suggest is watch the salt as it can get away from you if you keep adding it. LOL
The only thing I do is pepper the raw chicken before adding the other ingredients.
Another variation is adding slices of cheese on top of the chicken before the soup.🥰
Any cheese. OR you can add shredded cheese to the top about five minutes before the casserole is done.
Most of the time, I omit the cheese.
One less step. 🥴

This recipe is so simple you can make it your own by adding or removing almost any of the ingredients.
Even the meat…use pork chops or steak.

Chicken Casserole with Dressing
Equipment
- Casserole Dish 8X10, 11X7, 9X13, 8X8 (depending on chicken sizes)
Ingredients
- 4 chicken thighs, breasts or 6-8 tenders Breasts, thighs, legs, if using tenders, cut up (chunks if desired)
- 1 10.5 oz can Cream of Chicken Soup ANY Cream of soup, your choice (You can add additional can of soup but I don't)
- 1/4 cup milk
- 1 6 oz box Stove Top Stuffing Or Pepperidge Farm Or make your own stuffing
- 1 1/2 cups Chicken Broth OR any broth or make your own with water and "chicken better than bouillon"
- Several Slices Swiss or cheddar cheese can be placed on chicken before soup is added for variety Optional
Instructions
- Heat oven to 375 degrees and Spray casserole dish with cooking spray
- Place chicken pieces in bottom of casserole dish and season with salt and pepper if desired (I don't add salt to chicken as other ingredients are salty enough)
- Pour soup and milk over the top (you can mix it first, I don't)
- Add chicken broth to stuffing mix and spread over the top of the soup. My Aunt did not mix ...she just sprinkled dry stuffing over the top of the soup and chicken and poured the chicken broth over the stuffing to make the stuffing more like a topping. ( I mix it like making stuffing and then add over the top of soup and chicken)
- Cover with foil and bake for 30-40 minutes. Uncover and bake for 10-15 minutes or until chicken reaches 165 degrees and the top is how you like it.

Hi Kari! Oh yes, that’s a retro recipe for sure. A friend shared that with me back in the early 1970’s when I was a new mom. I do make the variation of pork chops and just did last week. Easy recipes are what I like lately. What a beautiful verse you shared at the end.

Well, Kari, this recipe is out. Ron is trying to quit eating meat, instead he’s having protein shakes. lol It sounded yummy to me though. He’s staying away from sugar and salt. Pepper is still good. A lot of stuff he can’t eat anymore.
Oh I am so sorry Sandy…it must be awful to have dietary constraints and yet a lot of people do. I am so fortunate my doctor told me to eat whatever I wanted…never thought I would ever hear that, but she said I need to do that to assure I am getting all nutrients etc. Hugs to you and Ron and Have a great Week.🥰
