Apple Sheet Cake

Ingredients
  

  • 1 /2 cup butter (1 stick)
  • 1 cup water
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 2 tsp cinnamon (ground)
  • 1/4 tsp nutmeg (optional)
  • 2 beaten eggs (room temperature)
  • 2/3 cup Buttermilk (1/2 c sour cream can be substituted)
  • 1/4 tsp salt (optional)
  • 2 cups Granny Smith apples (chopped)
  • 2 tsp vanilla

Icing/Glaze

  • 1/2 cup butter (1 stick)
  • 3/4 cup brown sugar (packed)
  • 1/2 cup Half & Half (or milk)
  • 2 1/2 cups sifted powdered sugar
  • 1 tsp vanilla or maple flavoring

Instructions
 

  • Grease and flour 15 X 11 X1 inch sheet pan and set oven to 375 degrees
  • In a sauce pan, melt the butter and add 1 cup of water and bring to a boil
  • Remove from heat, set aside and let cool a bit
  • In a large bowl whisk the flour, sugar, baking soda, cinnamon, and nutmeg until well blended
  • Add the eggs, vanilla and buttermilk (or sour cream) to the cooled butter mixture and add to the dry ingredients
  • Fold in the chopped apples (batter will be stiff)
  • Pour into prepared pan and use a flat spreader to even out the top
  • Bake for about 22 minutes or until toothpick inserted comes out clean.

Icing/Glaze

  • After removing cake from oven, make the icing if desired.
  • In sauce pan, mix the melted butter and brown sugar, bringing to a boil
  • Remove from heat and slowly add the half of & half (or milk) mixing to combine ingredients, then return to heat
  • Stir occasionally as you bring to another boil. then remove from heat
  • Slowly Add in the powdered sugar and finally the vanilla
  • Spread glaze/icing over the still warm cake
  • Remember that the apples make this a very moist cake and while the icing is delicious, it will seep into the cake and the cake will be even more moist.
