Cooked Cabbage with Bacon and Onion

Cabbage, cooked cabbage in particular….  has a bad name, but add bacon and onions…and I am here to defend it. Try this recipe and you will discover that it’s a fabulous side dish with a roast chicken, corned beef or I happen to like it as a meal in itself! 

Serve this at your St. Patrick’s Day Dinner….and you will come away a winner!

Cooked Cabbage with Bacon and Onions

Ingredients
  1. 4-6 thick slices bacon, diced
  2. 1 large sweet onion, chopped
  3. 1 medium head of cabbage (red or green, I prefer green for this dish)
  4. 1/2 to 1 cup chicken broth or water
  5. salt and pepper
  6. In a large Dutch oven or deep saute pan, cook the diced bacon until cooked through but not crisp. With a slotted spoon, remove the bacon pieces to paper towels to drain; set aside. Leave about 2 tablespoons of the bacon drippings in the pot.
  7. Add the chopped onion to the bacon drippings and cook, stirring, over medium heat until tender and lightly browned. This will take about 4 to 5 minutes.
  8. Coarsely chop the cabbage. Add the chopped cabbage to the browned onions and add 1/2 cup of chicken broth.
  9. Cover the pot tightly and reduce the heat to low. Simmer for 15 minutes. Add more broth or water, if needed, and cook for about 5 to 10 minutes longer, or until the cabbage is tender. Add the bacon pieces and stir. Heat through.
  10. Serves 6 as a side dish.

Notes
  1. Some people don't like the smell of cooked cabbage...I do not happen to be one of them. I love the smell and I love the taste.... the good news is...that it is a healthier dish than some sides.
  2. Go forth and eat cabbage!!!
