Mothers Day Fruity French Toast

Mothers Day is tomorrow and what better way to show you care by making this wonderful in-one-skillet (or baking dish) Raspberry French Toast.

I used the Four Fruit Preserves by Bonne Maman but it is more expensive than your traditional preserves.

*Bonne Maman Four Fruit Preserves can be purchased through Wal-Mart and some Kroger Stores. It can also be purchased on-line and if you are able to get it…I highly recommend this wonderful fruit combo from France.

Bonne Maman Four Fruit Preserves

 

It consists of Cherries, Red Currants, Strawberries, & Raspberries… the quality is excellent.

However, as an alternative, you may choose a cup of any of your favorite preserves for this recipe. I like Strawberries or Raspberries as the raspberries are used as a garnish. You can mix whatever preserves you have on hand or make with a single fruit preserve.

This is delish and easy to make. And, you can make it the night before and pop it in the oven the next day!

Mothers Day Fruity French Toast
Serves 6
French Toast loaded with strawberries, cherries, red currants and raspberries tucked in and topped with additional raspberries and a sprinkle of powdered sugar. Yum! Add a cup of steaming hot coffee or tea and this breakfast ...or late evening delicacy is just the ticket for relaxation!

Ingredients
  1. 3 cups whole milk
  2. 8 large egg yolks
  3. 1/4 cup maple syrup
  4. 1 tablespoon vanilla (or you can use vanilla bean paste)
  5. 1/4 teaspoon salt
  6. *1 cup Bonne Maman Four Fruit Preserves or substitute your favorite preserves.
  7. 8 croissants, torn into 2-inch chunks
  8. 1/2 cup chopped pecans
  9. 1/2 cup fresh raspberries
  10. Powdered sugar, optional
Instructions
  1. Preheat oven to 350°F.
  2. Combine the milk, egg yolks, maple syrup, vanilla, and salt in a large bowl and whisk until frothy. Heat the preserves in a small saucepan until warm and pourable, (1 to 2 minutes)
  3. Arrange half of the croissant pieces in the bottom of a 2 1/2-quart cast iron skillet or any enameled cast iron skillet.... and drizzle with half of the warm preserves.
  4. Pour half of the egg mixture over the croissants.
  5. Repeat with remaining croissant pieces, preserves, and egg mixture.
  6. Lightly press the croissants with a spoon to help saturate with liquid.
  7. Let mixture rest for about 20 - 30 minutes before baking.
  8. When ready to bake....sprinkle the casserole with pecans and raspberries.
  9. Cover the skillet with aluminum foil and bake for 30 minutes.
  10. Remove the foil and continue cooking until puffed and golden (about 15 to 20 minutes)
  11. Let stand to set for 10 to 15 minutes before serving
  12. Garnish with powdered sugar if desired
  13. Serve warm or at room temperature.
