Mini Strawberry Cheesecakes!
I know, I know…This is too easy!
Making these Mini strawberry cheesecakes is like taking candy from a baby,…. not that I have ever done that in my lifetime.
OK, maybe that one time that the baby was about to pop a piece of candy into her mouth and we know how a baby should not be eating too many sweets and I just…well, lets not talk about that right now.
Instead let’s talk about how easy this recipe is.
I made this last year and I would like to share it with you this year too because, well, because it is so pretty and it is sooooo good.
Now, don’t blink or you will miss the directions.
You start by buying a cheesecake mix and mixing it up according to package directions.
OK, if you really want to make your own home made cheesecake, that is always a good option too.
But instead of putting the cheese cake batter into one pan…pour it into individual cupcake pans and place in the fridge to set up.
Using a pre-bought jar of strawberry glaze, take a spoon and drizzle the glaze over the top of the chilled mini cheesecakes.
As much or as little as you prefer.
Pre-wash a whole strawberry and pat dry with a paper towel.
Dip the strawberry into the strawberry glaze until it is coated and place it on the mini cheesecake.
For variety, you could always dip the strawberry into melted chocolate, but then you might go into a sweet sugar coma and that wouldn’t be good for making dinner tonight.

I got the inspiration for these Mini Strawberry Cheesecakes last year when I saw something similar at a bake shop and the price was really high.

Love these! Okay, how did you get them out of the cupcake tin without tearing them apart? I’ve got an Eggnog Cheesecake recipe that I’m about to give a try…wish me luck…you have to bake it and you use cupcake liners and than have to peel them off the little cheesecakes…okay, as I’m typing this, I’m already frustrated and worn out. I may be trying it your way…much less heartache…LOL Love and hugs!

Benita if you look close, you will see a few “finger prints” in the side of the cheese cakes, BUT, I used non stick stoneware (Temp-tations) with a round of parchment paper for the bottom. I used a skinny spatula to go around the sides to loosen and to be sure of not sticking. They didn’t stick, but I still had to use my fingers to give them a boost out.
