Banana Nut Bread

Friends, I had a few bananas that were starting to get brown spots and we just couldn’t eat them before they got too dark.  I like to pop them in a plastic freezer bag and stick them in my freezer to use at a later date.  Today however, I did save out 3 bananas to use in this Banana Nut Bread recipe. The great thing about this recipe is one can add other ingredients such as chocolate chips, raisins, or even pineapple.  Today I had some mini chocolate chips on hand and so I used them along with chopped walnuts.

I love this moist Banana Nut Bread! It takes just a few minutes to whip up and it is always a no fail recipe.

I used to use a fork to mash the bananas but as of late, I have been using my potato masher and it requires less energy and I am all for that.

I used a ceramic loaf pan to bake my banana nut bread with chips, but I have also used mini loaf pans when I gave the little breads as gifts.  I will say that I prefer a metal pan rather than the ceramic as the bread can get a little darker on the edges… although the bread is not burnt at all.  (The pictures show it a little darker than it is in real life).  I have also used those cute little loaf pans made out of a cardboard-like material with Holiday designs on the outside.  They work well also.

Even though I make Banana Nut Bread all year long,  I also try to make it on Holidays…. as well as when I make breakfast for overnight guests. So good warm or cold and Banana Nut bread goes with almost any breakfast casserole you can think of.

Below is the easy peasy recipe.  It takes just minutes to put together and the taste is wonderful.  Enjoy!

Ingredients
  1. 1/3 cup shortening
  2. 1/2 cup sugar
  3. 2 eggs
  4. 1 cup mashed ripe banana (the blacker the banana peelthe better)
  5. 1 3/4 cups sifted flour
  6. 2 teaspoons baking powder
  7. 1/4 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1/2 cup chopped walnuts
Instructions
  1. Cream shortening and sugar until light and fluffy
  2. Add eggs, one at a time, beating well after each
  3. Sift together dry ingredients and add to creamed mixture alternately with banana mixture
  4. Stir in chopped walnuts if desired
  5. Mix until well blended
  6. Pour into a well greased 8 1/2 X 4 1/2 X 2 1/2 inch loaf pan
  7. Bake in preheated oven at 350 degrees for 1 hour or until a toothpick comes out clean.
  8. Remove from pan and cool on a cooling rack
  9. Serve warm or cold!
Notes
  1. Love this quick bread recipe. Try it and you will make it often.
  2. When my bananas start to get a few black spots, I pop them in the freezer. I pull them out to make this bread...it takes no time to thaw and I can easily mash with a fork. The darker the banana, the sweeter it becomes.
