Warm And Cozy Potato And Chicken Crock Pot Soup!

And what could be better as you are putting away Christmas decorations than a pot of soup simmering in the crock pot?
This recipe is so simple and aren’t crock pot recipes the best?
The Captain was flying today up in the cold North, (New England and heading for Canada)…when he called me.
He said it was 28 degrees and even though there are parts of the country with below zero temperatures, for me here in sunny Florida, that sounds very C-O-L-D!
As soon as he is finished flying his “tour” today, he will be flying home, most likely arriving about 6 pm and nothing could be better than a crock pot of hot and delicious soup for his warm and cozy dinner.
I will pair it with a loaf of crusty bread. After eating “out” for the last few days, a home cooked meal will make him a happy camper.
Gosh, do people even use that phrase anymore? Happy Camper?
Times and phrases change and I have to depend on my grand children to keep up with the current talking fads.
I love it when they hear me say something from the “good ole days” and they laugh and say…
“What does that mean, Gma?”
But I digress,
I love potato soup and the addition of chicken and bacon just makes it even better.
And the secret to this creamy soup is…
drumroll please!
…cream cheese!
Yep!, towards the end of cooking, take a cup or two of potatoes and broth out of the crock pot and mix in the softened cream cheese and pop it all back in the soup.
Yummy!!!!
Simple!
Easy!
And Delicious!
And aren’t these huge Santa cups adorable? I found them at Pier 1 on sale for 50% off! I know Christmas is over, but I can’t help it…they are just too darn cute! Ho Ho Ho!!!!
Potato and Chicken Crock Pot Soup.

- 2 chicken breasts or I used chicken thighs
- 4-5 yukon gold potatoes rough chopped
- 1 cup of diced onion
- 1 clove of garlic minced
- 6 slices of cooked bacon, rough chopped
- 4 cups of chicken broth or stock
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 package of cream cheese softened at room temperature
- Place chicken, potatoes, onion, garlic, bacon, chicken broth and salt and pepper in a slow cooker or crock pot and cook on low for 8 hours
- Remove the chicken and chop into bite size pieces
- Remove about 2 cups of the potatoes and broth and using either a blender or potato masher, mix in the softened cream cheese and blend well
- Add chicken and cream cheese mixture back into the crock pot and blend well.
- Serve with shredded cheese garnish, green onions and additional bacon as a garnish for the top
That sounds WARM AND COZY. The Capt should be a “happy camper” when he returns to his lovely bride and a hardy meal. Happy New Year dear friend.
