I thought I would share pics from an event the Captain and I hosted last night, it was our Elite Fleet…or over 50 group from our church….which is a monthly program we have started.
This is actually our third event as we started in February with a Valentine’s Day Party (we had 85 attend) and in March, we hosted a St. Patrick’s Day Party and last evening…our April event was a celebration of Easter. We are averaging about 50 guests for each event which is such fun.
I used pastel colors for the table settings…..pink, purple, yellow, light green, blue and grass green plates with matching flatware and cups!
The napkins had all the same pastel colors.
……..and I used a cake shaped like an egg for a centerpiece at each table. What the guests did not know was whoever sat at the corresponding cake color to plate color…got to take the cake home or share it with their table mates..
I used different pastel colored egg cakes for each of the 8 tables.
And a special sign for the table containing the Desserts.
The Captain and I decided we would have our usual potluck and feature a BINGO party using White Elephant Gifts as prizes that the guests brought with them.
In addition to fun stuff…we also get to eat and if you haven’t eaten at a potluck and not asked someone at sometime for a recipe…than I say, you need to get out more! 🙂
Last evening was no different.
We had chicken and noodles over mashed potatoes and some of the most wonderful sides…but let me get to the good “stuff”…the dessert table and in particular..a pineapple cake recipe.
Oh, my goodness! It was so delicious and I have the recipe as “Sweetness” (you know I have cutesy little names for everyone I mention on my Blog, to protect the innocent or guilty) was kind enough to share it. The printable recipe is below.

But back to the Pineapple cake.

- 2 1/4 cups flour
- 1 1/4 cups sugar
- 2 teaspoons baking soda
- 1 can (20 oz) crushed pineapple (do not drain)
- 1 teaspoon vanilla
- 2 eggs
- 1 can (20 oz) can crushed pineapple (do not drain)
- 1 box (3.5 oz) instant vanilla pudding
- 1 tub (12 oz) Cool Whip
- Mix the flour, sugar and baking soda together
- Add 1 can of crushed pineapple, (not drained) eggs and vanilla
- Bake in 350 degree oven in a 13 X 9 baking dish for about 25-30 minutes
- After the cake has cooled...make the frosting by mixing the crushed pineapple, (do not drain) instant vanilla pudding and cool whip together and generously frost the cake.
- I would chill the cake in the fridge until ready to serve.
