I like one pot meals…especially one pot meals that don’t take very long to prepare or cook.
And for March, the month of Green or any time of year, I love cabbage.
The March one pot meal fit right in with St. Patrick’s Day only it is a couple weeks early.
I had a head of cabbage I needed to use and I knew I would be making corned beef and cabbage in a few weeks so I looked at what I had on hand and saw polish sausage.
We love Keilbasa or any kind of smoked sausage that comes in a oblong circle.
It can be eaten without cooking, as I like to put slices of it on Ritz crackers along with a small square of sliced cheese, or it can be fried in a skillet along with onions, hash browns or even made into a casserole using mushroom soup or chicken soup.
Very versatile meat, much like ground beef.
After browning the smoked sausage and onions, I added the potatoes to my copper chef pot, although any pot will work.
This recipe is one of those you make up as you go along.
First I sliced the Kielbasa into slices, added chopped onion to a bit of olive oil and began to brown.
Then I added potatoes that I chopped into chunks. Didn’t even peel them, but remember to wash them first.
You could remove the smoked sausage so as not to brown them too much, but we like that crispy edges so I left them in the pot.
Next came the chicken broth.
I added salt and pepper and a few red pepper chili flakes.
Make sure the broth comes over the top of the cabbage, add more as needed.
You can chop the cabbage if you like, but I didn’t take the time..it all cooks the same so it is a matter of preference.
I covered the pot with a glass lid and let is simmer for about 30-45 minutes.
Served it up in a bowl and it was so yummy.
I actually made enough for two and believe me there was very little left over and the broth was so so good.
You could serve this with a crusty roll to sop up the juices or a softer dinner roll slathered with butter.
Whatever way you serve it, I believe your family will ask for you to make this recipe again.

- Kielbasa Sausage sliced into rounds (or any smoked sausage you prefer)
- 1 med onion chopped
- 6-8 small red or yukon gold potatoes (fingerling works too)
- olive oil
- red pepper flakes as desired
- chicken broth 2-3 cups as needed
- 3-4 cabbage chunks
- red pepper flakes as desired
- Lightly brown the sausage, onion and potatoes in olive oil
- Add chicken broth
- Add cabbage making sure the broth covers the cabbage
- place lid on the pot and let simmer for about 30-45 minutes
- Serve with hot sauce if desired or add more broth
