It seems we were celebrating New Years just a few weeks ago.
Oh,….. I guess we were. 🙂
I have been seeing so much green around town these days, the Sno-Birds are really getting into it.
Green T-shirts, Green plaid golf pants….
…..and after church the other day, I saw 2 couples at Bob Evans restaurant all decked out in green clover-shaped sunglasses, hats and green beads.
Everybody is Irish on St. Patrick’s Day.
Yes, I have the Irish in me too…..my grandparents on my Mother’s side were Irish and Scotch….Mom used to say Scotch-Irish but I have always preferred to accent the Irish over the Scottish, perhaps it is because my hair is red…well, it used to be more red than it is now….for some reason there is a wee bit of grey, not that I be a showin’ it to ye. 🙂
I have a dear friend who has the most beautiful raven colored hair and she is a true Irish lass. She lives in Dublin, Ireland and we do keep in touch…and how I love to hear her speak. She has that beautiful lilt in her voice that always seems to have a question at the end of her sentences. I love it and her.

Every one claims to be a little Irish on St. Patrick’s Day and there is nothing wrong with that. In fact, I have started the wearin’ o tha green with a few recipes.
Actually, no recipes to follow, these are just put together a semi-homemade kind of thing.
I love “recipes” like that don’t you?
I sat up a vignette using my Belleek Ireland, basketweave, tea pot, creamer and sugar. I added green plaid napkins, a cookbook, a vintage St. Patrick’s Day card and a cabbage serving bowl filled with potatoes. I topped the potatoes with 2 white, clay vintage pipes that were given to me many years ago and a bow made of shamrock ribbon.
The first “recipe” can utilize left over mashed potatoes…that is so easy to make…and the other is another equally easy dessert.
I used pre-shaped baked shells. I mixed a little pesto into mashed potatoes and piped them into the shells for the cutest little green bites of goodness. (reheat under the broiler briefly)
Who doesn’t like mashed potatoes?
The name of this cookbook is “The Complete Irish Pub Cookbook” and the pot pie on the cover is another easy, oh so good recipe.
On St. Patrick’s Day, I will be making corned beef and cabbage….I always get a large corned beef because I love to use the leftovers for Reuben Sandwiches.

This next “recipe” is so easy, I made mini cupcake brownies from the mix and used Pillsbury creamed cheese frosting to alternate in parfait glasses.
Crumble the brownie if you make larger cupcakes and alternate the frosting and brownie until you reach the top of the parfait glass.
I absolutely love Ghirardelli’s double chocolate brownie mix, quick and delicious and decadent.
You can use as much or as little of the cream cheese frosting as you desire, be sure to remember that this is quite rich, but oh sooooo good. I also topped off each parfait with a bit of green tinted whipped cream, piping it on using a piping bag.

Kari, I love the Belleek tea set, I don’t know why I have not treated myself to one?! I love mashed potatoes and my sweet RM makes the best ones. The Ghirardelli brownie mix is great, I use it a lot. Yes, I love a Reuben, also! Great post my sweet friend! ☘️💚☘️
Such a sweet vintage card you have on display. Your “recipes” are perfect touches for an Irish celebration and my kind of foods. The mashed potato bites look so pretty piped into the baked shells. Yum to brownies with cream cheese. When our kids were young we always had a green Jell-O salad or dessert on St. Patrick’s Day.
We’re ready for another late night. Hope our Jayhawks can pull out another win.

Yes, I was stressing last night especially when we went into overtime. I don’t know how they can turnover the ball with a few seconds left. LOL. I am usually talking (loudly) to the tv telling them to HOLD ON TO THE BALL!! Let’s hope they can hold it together for one more late night game. (One at a time cause if they win, the next game is at 9:30, my time, too)

Love all the food you do, but unfortunately our diets are going to change a lot since Ron’s surgery. Ron is Irish, but he doesn’t like corned beef. However he likes cabbage. lol
I remember having good times celebrating St. Patrick’s at the Levy and at other places here in K.C.

Hi Sis. Of course I’m preparing corned beef & cabbage on St. Patrick’s Day. Always have, always will. Like you, I go big on the corner beef, as I too, love Reuben sandwiches. Plan on making the Red Velvet Cake soon…it looks so good & I’ve never had it before. The mashed potatoes, piped into the shells is something else I wanna try. I love mashed potatoes anyway I can get them…hot, cold, on top of pizza…I love mashed potato sandwiches, on bread or tortilla. YUM! ♥️
I LOVE LOVE LOVE mashed potatoes and will eat them anyway I can get them. LOL…my favorite meal is fried chicken, mashed potatoes and gravy, creamed corn, and salad or cole slaw and of course home made rolls. YUM!
