Grilled Bread with Cotija Cheese…I love crispy toasted bread dripping with goodness and served with …well, served with anything!
There is a little Italian cafe tucked into a little strip of shops very close to our home….and I love to go there for the toasted bread with a dipping sauce of Parmesan cheese, extra virgin olive oil, chile pepper flakes and of course garlic!
The below recipe is a variation of this dipping oil….but leaning towards the Mexican side rather than the Italian side.

Grilled Bread with Cotija Cheese

Warm crispy bread topped with olive oil and garlic...finishing touch is the Mexican Cotija Cheese Yummy

Ingredients
- 8 slices baguette
- 1 tablespoon olive oil
- 1 halved garlic clove
- 3 ounces crumbled cotija or feta cheese
Instructions
- Heat grill to low. Brush baguette slices on both sides with olive oil. Grill on one side until golden, 1 to 2 minutes. Rub grilled sides with halved garlic clove and top with crumbled cotija or feta cheese. Return to grill, cover, and cook until undersides of baguette are golden and cheese has softened, 1 to 2 minutes. Drizzle with more oil.
Notes
- Cotija is a Mexican cheese...so good!
