Delicious Blueberry Smoothie!  

I love Breakfasts!  I especially love “the works”, meaning bacon, eggs, toast, breakfast potatoes, orange juice and coffee or tea. 

The Captain and I try to have a quiet leisurely breakfast with “the works” on week-ends. 

Of course I vary the menu, but we like to start the week-end with a slow paced breakfast together… and many times we eat out on our Lanai.  (we can do this year round living in Florida)

We use this time to reflect and have our very own quiet time.  🙂

However, one can not start every day with a big hearty breakfast and for those busy week days…..I like to use my VitaMix and mix up a healthy smoothie. 

I use whatever fruit I have,  and I always have frozen bananas in my freezer…so there is not much thought needed to make a great smoothie!

Try this one, modifying it with whatever fruit you have on hand.

Delicious Blueberry Smoothie
Serves 2
Try this blueberry smoothie for a healthy breakfast substitution! Vary it up with different fruits and green veggies. There is no wrong way to make a smoothie!

Ingredients
  1. 1 banana, frozen
  2. 1 cup mango chunks
  3. 1/2 cup blueberries
  4. 1/2 cup plain nonfat Greek yogurt
  5. 1/2 cup milk
  6. 1 heaping tablespoon raw honey
  7. few leaves of kale or Spinach or any other green veggie of your choice
Instructions
  1. Place bananas, mangoes, blueberries, yogurt, and milk in a blender.
  2. Blend until smooth.
  3. Add the kale or spinach leaves and honey
  4. Add a few ice cubes to increase the volume of the smoothie
  5. Blend until smooth.
  6. Top with additional blueberries and pour into your favorite glass or cup (we all have them don't we?).
Notes
  1. I use my VitaMix but any blender will work to make smoothies. Change up ingredients to your liking. I sometimes make the all green smoothie using spinach, pineapple, apple and banana.
  2. I freeze my bananas when they start to turn dark so I always have an automatic "ice cube" to chill my smoothie. I still like to add ice.
  3. You can use fresh or frozen fruit.
