Perhaps frightful is not the correct term to use for Fall or Autumn, but the weather is definitely changing to cooler temperatures.
I was speaking with Only Daughter on Face Time this morning and she commented that she was wearing thick socks and long sleeves and sweat pants….or if she didn’t say sweat pants she said Great Grandson was wearing sweat pants.

Point is….the weather in the Midwest was “chilly” to say the least.
Here, our weather is much cooler….not necessarily sweat pants cooler, but a welcome relief to one of the hottest summers on record on this peninsula.
All I really need is a cloudy day and a crispy cool morning and I am ready to make and eat soup. The Tablescape is so easy…the centerpiece already on the table
So I dug out a couple recipe books from my large assortment and added a Southern Living magazine that I picked up at the supermarket…it was touting Chilis, Soups and Stews and…well, you understand don’t you?
And after much searching, I found this recipe for Toscano soup which is very similar to a local Italian restaurant chain’s Toscan Soup.
Yum-my! The Kale tells me it is healthy soup while the cream and chicken stock combine for a nice creamy soup with a rich flavor.
And making this soup took very little time….I browned the sausage with the onions and garlic while peeling and slicing potatoes.
Simple ingredients for a simple soup.
Can I tell you how delish this soup is?

- 1 pound ground hot sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon flour
- 64 oz. chicken stock
- 6 Russet potatoes
- 1 cup heavy cream
- 6 cups torn kale pieces
- Add sausage to a large soup pot and crumble as it cooks over medium heat.
- When sausage is broken up and beginning to brown, add onion and garlic to pan and continue cooking until sausage is cooked through and onions are translucent.
- Sprinkle flour over mixture and stir to combine.
- Pour in the chicken stock and bring to a boil.
- Meanwhile, wash potatoes and cut each in half lengthwise. Slice into 1/4-inch slices.
- Once soup is boiling, add potatoes to pot. Cook for 20 minutes or until potatoes are fork tender.
- Reduce heat to low and stir in the heavy cream and kale. Cook for 5 minutes, stirring occasionally.
