Pineapple Tropical Delight!
Doesn’t it bring you thoughts of cooling ocean breezes and wonderful tropical drinks with little umbrellas?
It has been so warm these days here in Florida that I decided it was time for a tropical treat for my weekly Bible study ladies.
Hebrews 10:24-25 ESV
And let us consider how to stir up one another to love and good works, not neglecting to meet together, as is the habit of some, but encouraging one another, and all the more as you see the Day drawing near.
Friends, we have had rain almost daily, but most times it feels like a sauna once the rain has stopped, so it was time to give our taste buds a cool and refreshing snack.
Pineapple ice cream cone cupcakes with Pineapple frosting and a Pineapple Sangria with a little home grown mango thrown in.
Citrus is always crisp, cool and refreshing.
To set the scene, I brought out a bright yellow and white gingham tablecloth and put a rustic tin pitcher filled with yellow and gold sunflowers.
The Bible Study ladies were delighted with the Pineapple cupcakes in cones…..
And the Pineapple Sangria was so easy to put together. I just started dumping anything pineapple into it.
The cupcakes are so easy to make.
Just add the batter to the cone that you have placed in a cupcake tin. You can use pieces of foil if you feel your cones will topple.
Mine always stand firm and so far, I have been able to carry them to the oven without them tipping over.
After your cupcakes are baked, be sure to use a toothpick to poke a hole in the bottom of the cone to release the steam.
This prevents the cones from getting soggy.
I put the frosting in a piping bag and piped the frosting onto the cooled cupcakes.
For decor, I cut each straw into 3 pieces and topped each ice cream cone cupcake with a little pineapple.

Tropical Pineapple Cupcake in a Cone
Ingredients
- 1 box yellow cake mix
- 3 large eggs (room temperature)
- 1/3 cup vegetable oil
- 1 1/2 cups Pineapple Soda I used Fanta
- 1/2 pkg Pineapple Jello (dry)
- 1 12 pack Flat Bottomed Ice Cream Cones
Pineapple Frosting
- 1 1/2 sticks room temperature butter
- 1/2 tsp salt
- 1 tsp vanilla
- 4 cups Powdered Sugar
- 1/2 pkg Pineapple jello (dry)
- 3 tbsp Pineapple Soda I used Fanta
- 1-2 drops Yellow Food Coloring optional (I used gel)
Instructions
- Add eggs, oil, soda, and jello to yellow cake mix. Combine thoroughly. Using an ice cream scoop, fill ice cream cones about 2/3rds full. Set flat bottomed cones in cupcake pan and place in 350 degree oven for about 15-18 minutes until done...check with a toothpick.Remove cone cupcakes from oven and immediately poke hole in the bottom of cone to allow steam to escape. This will keep your cone from becoming soggy. Cool completely before frosting cupcakes.
Pineapple Frosting
- Cream butter using electric mixer. Add salt, vanilla, and pineapple jello.Add in the powdered sugar and pineapple soda alternately mixing well after each addition.Add the yellow food coloring if desired and put frosting into a piping bag and pipe onto cone cupcake.Add any embellishments to match your decor. I cut gold straws into 3 pieces and added an un-edible pineapple to the top. Add sprinkles or nothing at all.

Pineapple Mango Sangria
Ingredients
- 1 can pineapple chunks in light syrup
- 1 46 oz unsweetened Pineapple juice I used Dole
- 1 16 oz Sprite any lemon lime soda
- 1 cup mango chunks or any fruit you choose
- 1 liter pineapple soda I used fanta
- 1 bottle chilled prosecco (750 ml) optional
- 1 fresh pineapple cut in slices and wedges for garnish Use for garnish on rim of glass and in sangria as desired
Instructions
- When ready to serve....Use large punch bowl or 3-4 qt container. Add Chilled ingredients in any order and in any amounts to your taste. Include pineapple and mango chunks in individual cups or glasses with garnish of pineapple wedges.You can use any fruit you desire...
