Every Day, New Mercies I See…

Dear ones…this post should have gone out yesterday on the Lord’s Day…but as you know, sometimes life happens and things don’t get done as we would like.  So I have adjusted the post for today…Monday…. with a few modifications.  I will also show you a quick and easy dinner recipe and a dress that I have gotten a lot of compliments on.

Monday thoughts and beauty

I would like to share with you a few thoughts about “Every Day New Mercies I See…” the title of this post.

I love sunrises and sunsets.  There are no words for the beauty in them.  The Captain and I try to see as many as we can.  On our honeymoon, we traveled by camel, up to the top of Mount Sinai in an all night journey, just to watch the sunrise.  I will never forget it…it was surreal, as I rode on my camel led by a young boy.  The peaceful tranquility wrapped around me like a warm blanket: familiar and comforting:…. the beautiful stars, so close and yet so far away…I felt I could reach up and pluck one from the night sky…..it was an experience I will never forget.

You might remember this beautiful old hymn…”Great is Thy Faithfulness”   I took the title of this post from a line from the following hymn.

Morning by morning new mercies I see:
All I have needed Thy hand hath provided—
Great is Thy faithfulness, Lord, unto me!

Summer and winter and springtime and harvest,
Sun, moon, and stars in their courses above

To Thy great faithfulness, mercy, and love.

There is so much beauty around us, isn’t there?

And there is an awful lot of “ugly” going on in this world today…but we mustn’t forget the beauty that is there also.  We just need to stop, look and listen.

The Easy Dinner…in a sheet pan…

Sea Food Boil in one pan and in the oven

Most Southerners love a SeaFood Boil and it is relative easy to make…however, I have found an even easier way to get the same delicious results.  The beauty of this dish is it is a sheet pan meal. 

You can add anything you would like for this sheet pan dinner, but I have used shrimp, corn, potatoes, onions, and kielbasa.  I did place the summer sausage in a skillet for a few minutes to give it a little color and bring out the flavor but you could just add it directly to the sheet pan.  I lined the pan with foil and added my ingredients…topped it with foil and put it in the oven at 425 degrees for about 20 minutes.  Andouille sausage is best but I didn’t have any so I used Kielbasa. I sprinkled with Creole Seasoning and a little paprika and it was so good. You can add clams, crab legs etc…but I only had shrimp.  I did use Yukon gold potatoes, but small red potatoes or russets would also work.  Make it easy on yourself. 

You can lay out newspapers to serve your oven baked sea food boil or serve it directly from the foil.  I find 20 minutes to be long enough but if your potato chunks are large, you might want to zap them in the microwave before adding to the foil sheet pan.  I don’t want the shrimp overcooked…so use your own judgement on the timing.  My printable recipe is below

Sea Food Boil in one pan and in the oven

Sheet Pan Sea Food Boil Baked in the Oven

Ingredients
  

  • 1 pound Fresh Cleaned Shrimp (can use frozen)
  • 6-8 small/unpeeled Yukon Gold Potatoes (cut in half)
  • 1 medium Onion (half slices)
  • 1 cup Kielbasa (or Andouille) Sausage, sliced
  • 2 ears Fresh Corn on the cob (cut into small cobs)
  • 1 stick butter (melted) you can use less
  • 1-2 tsp Creole Seasoning (you can use Old Bay)

Instructions
 

  • Line a sheet pan with heavy duty foil and place all your ingredients on it. Pour butter over all and add Creole Seasoning as desired. Top with another sheet of foil pinching the sides together to allow for steaming. Bake in oven at 425 degrees for about 20 minutes. Do not overcook seafood.
  • You can add any seafood you would like, such as crab legs, mussels, clams and any other veggies you like. Also, you can pre-cook (or par boil) the potatoes if you feel they might need it. My yukon gold potatoes were very small and I cut them in half. I did lightly brown my kielbasa as I didn't have any andouille. I also added a sprinkle of paprika for color.
  • Serve on newspaper for that authenic Sea Food Boil OR just serve directly from the sheet pan.

And Now The Dress….

The dress is a simple sundress and I have it in two colors.  It was actually in my closet for quite some time… squished in the back.  I have been slowly removing clothes to either donate to our local Kiwanis Shop or toss or keep…y’ all know the drill.  This green paisley sundress I have decided to keep because I have received so many compliments on it.  Who Knew? LOL. It is very lightweight and simple.  It can be worn over the shoulders or in a rounded neckline.  If you would like it,… it comes in many colors…you can find it here.

  1. Yes we must be grateful for each new day, and for the beauty of every sunrise and sunset. Your sheet pan shrimp boil is similar to my foil packet one and so easy. I do love that cute dress, too. I hope you and your captain have a wonderful week!

    1. Thank you Kitty…I like simple cooking food that tastes oh so good…and my sweet grandaughter texted me that she made the shrimp boil after seeing mine. She had all the necessary ingredients on hand. It doesn’t get any better than this with our grands, does it.

  3. What a lovely memory from your honeymoon by riding a camel up Mt. Sinai to see the sunrise. Our family years ago visited the beautiful Acadia National Park but didn’t get up earlier enough to see the sunrise but we did see the sunset from Mt. Cadillac. There is so much beauty around us. We just need to open our eyes. BTW, that’s a beautiful dress.

    1. You are so right my friend…the beauty is there and I believe all our National Parks are amazing in their own way. I love Maine…especially along the water and the lobsters are delish. Jan the dress is so reasonable and the best part (because of the large overlap ruffle across the top of the dress, one can get away without a lot of binding undergarments if you get my meaning.)

  6. Good morning Kari! I am so thankful that God’s mercies are new every morning! We sang this great hymn this past Sunday as our son led and Butch played guitar with Seth and I played keyboard. It was a special blessing for us.

    The sheet pan seafood boil looks delicious and a great idea. I love the dress and need to check it out. I am petite, it is hard to find a pretty long dress that doesn’t drag the ground on me! Happy Tuesday, my friend!

    1. Oh Pam I can just hear you all playing that wonderful hymn. It has always been one of my favorites. I don’t believe in coincidences….it is all in God’s Plan for His children. The sheet pan boil is so easy and so good. I told the Captain that I just might wear that sundress every day for the rest of my life…affirmation is wonderful. LOL. BTW, I am 5 ft 4 in and dwindling as I get older….and the length is good for me. 😊
