September and This N’ That
My friends can you believe it is the middle of September already? Where did Summer go?

I can’t say I am disappointed because I do like Autumn…My birthday is in November and I am romantic enough to love the crisp cool air and warm cozy fires in the fireplace, as I curl up with a good book and a cup of hot chocolate. And of course the beautiful sunsets of the Fall season. I do have a confession to make, the above photo is not here in Florida…it is from my home state of Kansas. As a child, I used to run through the fields of sunflowers on the farm where we lived. I have spoken of those times often on this blog.

And who doesn’t love the smells of Autumn like hot apple cider and an apple cinnamon dessert wafting out delicious aromas from your kitchen?



At our Bible Study this week, I layed out almond coconut chocolate chip cookies, pecan cookies, oatmeal raisin cookies and of course chocolate chip cookies on a beautiful leaf shaped platter….along with green Granny Smith apple chips and Fuji apple chips….and wonderful hot apple cider served in tall cups.

At last week’s Bible Study, I made this easy apple cinnamon dessert…and topped it with whipped cream. It was so good. (Recipe Below)



This is an easy recipe and I call it Easy Apple Cinnamon Dessert. The Bible Study ladies loved it and so did the Captain. He asked me why I only make it in the Fall (or September) as here in Florida, apples are plentiful all year round. I had to admit I did not have a good answer other than it was not September,… when thoughts of state Fairs and pick your own apple orchards and hay rack rides and corn field mazes and….well you get the idea. We are habitual aren’t we? Do you find you only make certain foods “in season” only?

Easy Apple Cinnamon Dessert
Ingredients
- 2-3 medium apples (any baking apple will work)
- 1/4 cup light brown sugar (can use regular sugar if desired)
- 2 tbsp ground cinnamon
- 1 cup softened butter
- 1 cup sugar
- 3 large eggs
- 3/4 cup flour
- 1 tsp baking powder
- whipped cream or cool whip
Instructions
- Heat oven to 350 and spray a 9X9 baking dish with baking spray
- Core and slice apples (peel if desired) add light brown sugar and cinnamon and mix well
- Cream the butter and sugar until light and fluffy.
- Add the eggs one at a time. (Don't use a mixer as the cake will be more like bread pudding...ask me how I know this.)
- Add the flour, baking powder until just combined. (do not overbeat)
- Layer half the batter in the baking dish, followed by half the apple mixture. (You can arrange apples or just "spread" them..it really doesn't matter as they will cook and blend in the baking)
- Add remaining batter on top of the apples followed by remainder of the apples.
- Bake for 30-40 minutes, checking for doneness. Add or subtract time as needed, but do not overbake.
- Spoon or cut into squares and serve with whipped cream topping


It was also a sad time for our nation this past week….and the Captain placed our flag at half mast. We are praying for our nation.

Hi Kari, and Happy Fall (officially)! Im just catching up from last week. Yes, a very sad week for our nation. I love your quoted scripture, and the secular quotes of the season. It is funny how we do typically make things only seasonally, as if our stomachs know what time of the year it is, lol. Your apple cinnamon looks great. Your Bible study group were treated well!
