Biscochito Cookie Recipe Straight From New Mexico! 

It is hard to believe but Christmas is just 2 weeks away!

Biscochitos Cookies

It seems like we just sat down to the Thanksgiving meal and now it is time for Christmas.

Have you been doing a lot of Holiday baking?

I have been making cookies and candy and one of my favorites is this cookie called Biscochitos Cookies.

 Many years ago I posted this recipe, but every Christmas when I make these cookies, I feel I should post it again and…it is that good. Click here.

When I lived in New Mexico, we made these Biscochitos Cookies at Christmas time and they smell ohhhh sooooo good when baking and the taste is even better. They are much like a sugar cookie which is rolled out and cut into whichever shape you desire.

Biscochitos Cookies Ingredients

If you look at the ingredients, you might question a few.  Like anise and lard and Brandy.

Please don’t think the anise is too strong a flavor for these crispy/soft cookies because it is a perfect addition to the dough. In case you are not familiar with anise, it has a sort of licorice flavor but it is perfect for these cookies.  It is really not that strong a flavor when baked in Biscochitos Cookies.

You will also note that instead of shortening, this recipe calls for lard.  You can substitute the lard, but the cookie just doesn’t taste the same using shortening. (Just as a side note…unless you have tasted chicken fried in lard…in my opinion, you haven’t tasted great fried chicken.)…and it is the same with these cookies. So don’t be afraid to try using lard.  You can find lard in the refrigerated section of your super market.

As far as the Brandy, it cooks out of the cookie, but you could omit it or use the brandy flavoring if you like.

The recipe below is from my sister-in-law who is more like a sister to me.  Her name is Vera….and she is Spanish and let me tell you she has some wonderful Mexican recipes which she has shared with me.  Many of these recipes were handed down generation to generation. I cherish the hand written recipe on a orange card that she gave me over 20 years ago.

If you have never had a Biscochitos cookies from New Mexico, you really should make these.  

Once you make them, I am sure you will want to make them every Christmas….when I make them, it makes me long for the South West and all my favorite  foods of New Mexico.
