Rotel and Cheese Appetizers
Perfect tailgate food!! Or a great Appetizer !!
Are you looking for a quick appetizer that is not only easy to make but tastes great too?
Who doesn’t like a can of Rotel’s tomatoes and green chiles added to Velveeta Cheese in a sauce pan and mixing til it is smooth and warm? Of course that simple recipe (if you can call it a recipe) has been around for 50 years or more. Well, this recipe is on that same vein….easy and delicious. You use frozen pastry cups and fill them with the same type mixture.
I remember my first introduction to Tex-Mex foods way over 50 years ago and I was hooked. I have loved it ever since. However, I must confess that when we lived in New Mexico, I was introduced to what we call real Mexican food and I loved it too. But you know, our appetites have room for both types of Mexican food. If you are like me, my palate is always for trying something new and if you make it easy, I am most likely going to make it over and over. It will certainly be added to my recipe file and the meal rotation.
I bring out this recipe every New Year’s Eve and the Captain would be disappointed if it were not included in my New Year’s spread which usually consists of appetizers only. To me appetizers are a perfect New Year’s foods….especially if they are easy to prepare. I also like the convenience of noshing all evening long…at your leisure while watching sport’s games or Christmas Movies or playing games with friends. We tend to like playing card games or working on a jigsaw puzzle if we are spending the New Year alone.

- 1 can Rotel chilies and tomatoes, drained
- 1 jar of bacon bits or make your own
- 1 cup shredded swiss cheese (or any cheese you prefer)
- 1 cup of miracle whip or your choice of mayo
- 3 packages of phyllo pastry cups (thawed)
- Preheat oven to 350 degrees
- Mix the drained Rotel, bacon bits, shredded cheese and Miracle Whip (or Mayo) in a bowl.
- Scoop mixture evenly into the phyllo cups
- Place on baking sheet
- Bake for 15 minutes or until bubbly

Can u use sour cream instead of Mayo???
